Ur Mom does her part to support the veggie world. She eats what is in her CSA box. She waxes poetic over the first crop of most everything…but kale, well not so much…
The arrival of kale more involves dodging comments from family members about wanting to eat out for a change. And concealing the bunch in the refrigerator to appear later at an unguarded opportune moment. (Dinner is served!)
Until now. Until a funny little recipe on the edge of my mind surfaced… I had the ingredients. I threw it together and braced myself for the comments sure to come from the male members of the household.
But…dead…silence… Munching. “Thanks. Gotta go.” “Ur welcome. Bye. Be safe.”
Wait! Following into driveway, unable to contain myself, “You do know you were eating KALE, right???!!!” “Uh, yeah, I’m not stupid. Gotta go.”
Try this now. I have nothing more to say.

3 slices bacon, chopped
1 bunch chopped cleaned kale
1 can cannelloni beans
¼ teaspoon crushed red pepper
1 clove garlic minced
1 cup carrot diced
1 teaspoon dry sage
¼ teaspoon salt
1/3 cup vegetable stock
1 cup shredded white cheese
Rinse and drain kale and beans.
Sauté bacon over medium heat in a nonstick skillet.
When bacon is almost ready and looks like this…
…Go ahead and drop chopped kale into a pot of boiling water.
Remove crispy bacon, leaving behind only about 1 tablespoon of drippings.
Drain kale when it is tender, about 6 minutes.
Add crushed red pepper and garlic to pan drippings. Sauté briefly until garlic releases its odor.
Add carrots. Sauté for a few minutes.
Add bacon, broth, sage and salt.
Bring to a boil. Cover. Cook until carrots are tender crisp. Add beans.
Stir in kale and spoon over warmed tortilla.
Add a sprinkle of cheese and roll it up!
Prepare to love kale. And leftovers are just as good!
