So, my swimsuit came in the mail today. I’m in LOVE with the suit, but not the Christmas cookie weight that I’m still carrying around. (Full disclosure: today, when shopping for a swimsuit cover-up, I downed a chocolate milkshake.) In summary, I’ve reached my tipping point. It’s yoga and veggies for me from now on…kind of…at least tonight… 

Luckily, springtime in Texas means there is an abundance of yummy produce. Gone are the bitter winter greens; they’ve been replaced with butter lettuce and fresh romaine. So tonight, I’m turning over a new leaf, and preparing a fresh garden side salad with a yummy buttermilk dressing. (Baby steps, people.) 

This dressing turns an ordinary salad into something smooth, tangy and actually kind of good for you. Feel free to add in whatever spring herbs you might have laying around…and toss in whatever extra veggies look good…and ultimately you can feel really darn good about urself…I know I will…

Gather up:
¾ cup buttermilk
½ cup sour cream
1 tablespoon lime juice
Splash hot pepper sauce, or pinch cayenne pepper
2 tablespoons chopped green onion
2 tablespoons parsley
½ teaspoon garlic salt
Freshly ground pepper to taste

Prepare lime, green onion and parsley.

Put all ingredients into a container large enough for mixing.

Mix thoroughly. (Electronic mixing in a food processor or blender is pretty efficient…but not necessary)

And there you have it – fresh, homemade and delicious. The dressing will be thinner than bottled dressing, all the easier to slather all over ur salad!

I feel one step closer to my “beach body” already…
